The pulp then undergoes freeze-drying, a method where the fruit is quickly frozen, and the water content transitions directly from ice to vapor without passing through the liquid phase. This low-temperature process preserves the berry’s natural taste, vibrant color, and dense nutritional profile, transforming the pulp into a fine shelf stable Acai Powder.
