Recently, we travelled to South America to visit our açaí producer in the Amazon region. What we experienced was more than a sourcing trip – it was a firsthand look at how traditional community harvesting and advanced processing technology come together to create one of the world’s most enduring superfoods.

Açaí: A Wild Amazon Superfruit
Açaí is not cultivated. It grows exclusively wild on very tall palm trees in the Amazon rainforest, throughout South America. This makes its supply chain fundamentally different from farmed crops – depending on seasonal forest cycles.


A Nutrient Dense Powerhouse Superfood!

The berry itself is nutritionally remarkable. It is:
- Rich in vitamin C
- Packed with antioxidants
- Naturally high in healthy fats
That higher fat content gives açaí its distinctive richness and depth of flavor, one reason it stands out in superfood blends, smoothie mixes, and muesli bowls. Most commonly, it reaches international markets in freeze-dried powder form.
A Community-Driven Harvest
Harvesting açaí in the Amazon is a coordinated community effort with clearly defined roles.
The work begins in the forest. Men climb the extremely tall palm trees, a physically demanding and highly skilled task. They cut down berry-laden branches and carefully lower them using ropes to prevent the fruit from touching the forest floor and becoming contaminated.


Once the berries arrive at the local facility, women take over. In simple but hygienic processing units, they:
- Strip the berries from the branches
- Wash them thoroughly
- Produce a fresh açaí puree
This puree must be processed immediately. Timing is critical.


After production, the fresh puree is placed into small bags and rapidly cooled. Because açaí is highly perishable, temperature control is essential from the very first stage.
Once sufficient volume is collected, the puree is transported in a refrigerated truck on a two-day journey from the Amazon community to the main processing facility. Maintaining the cold chain ensures that quality, flavor, and nutrients remain intact before the next step: freeze-drying.
Freeze-Drying: Preserving Nature Through Sublimation
The transformation from puree to powder relies on advanced freeze-drying technology – specifically, a process called sublimation.
What Is Sublimation?
Sublimation is when water transitions directly from solid (ice) to gas (vapor), bypassing the liquid phase entirely. This is the core principle behind freeze-drying.
Here’s how it works:
- The fresh açaí puree is spread onto trays and loaded into a large, vault-like freeze-drying chamber.
- A powerful vacuum is created, dramatically reducing pressure and temperature (down to extreme sub-zero levels), freezing the puree solid.
- Under low pressure, the boiling point of water decreases significantly.
- By carefully raising the temperature while maintaining vacuum conditions, the frozen water sublimates into vapor and is extracted from the chamber.



Because the product never passes through a liquid phase during drying, all the nutrients, colour, flavour and oil content are preserved almost perfectly. The process also contributes to microbiological stability, ensuring a safe, high-quality ingredient.
From Dried Chunks to Fine Powder
Once freeze-drying is complete, firm, dry açaí pieces remain. These are milled into a fine powder in a separate step.
Packaging is critical at this stage. Açaí powder is sensitive to light due to its high oil content. Exposure can lead to oxidation and bleaching. For this reason, the powder is packed in 20 kg aluminum bags, which protect it from light and help maintain its quality during storage and transport.


Açaí Powder: A Superfood with Staying Power

Açaí powder has a wide range of culinary applications:
- Açaí bowls
- Smoothies
- Muesli and granola blends
- Energy balls and bars
- Ice cream and dessert applications
Its appeal lies in its combination of flavor, richness, and nutritional benefits.
Açaí rose to mainstream popularity in the United States around 10–15 years ago, becoming one of the first true “superfoods” to gain mass attention. From there, demand expanded across Europe and into markets such as Australia.
Unlike many food trends, açaí has not faded. It remains a highly sought-after ingredient with stable global demand, making it a long-term staple superfood.
