The primary cacao harvest is gearing up in Peru with peak production taking place from May – July. Harvesting involves carefully removing ripe pods from the trees and extracting the wet beans by hand. Next the beans are fermented to take away the bitterness and the acidity and then they are crushed into cacao nibs, milled into rich cacao paste, and finally pressed into cacao butter and cacao powder. Peruvian cacao is prized for its unique and diverse flavour profiles, stemming from the country’s varied climates – ranging from the humid Amazon to the high-altitude Andes. 

Despite the last one and a half years of very high, volatile cacao prices, due to repeated poor harvests in major cacao growing countries in West Africa, demand remains high.
